This has to be one of the easiest most basic soups ever but it tastes great and it's ready in less than 45 mins!
Ingredients:
2 Cups of red lentils
1/2 of an onion
Vegetable stock or stock cubes (I used 5 Aldi's vegetable quixo cubes)
Instructions:
1. Rinse the lentils until thoroughly cleaned and the water runs clear (I use a large sieve for this)
2. Finely chop the onion.
3. Place both the lentils and onion into a medium sized pot and fill with boiling water.
4. Bring back to boil then simmer for 20/30 minutes until the lentils are cooked.
5. Add your stock or stock cubes and continue simmering for another 10 mins.
6. Remove the pot from the heat and use a hand held blender to blend the soup to your preference.
Serve and enjoy!!
Tip: You can basically ad any other vegetables of your choice to this soup or you could add bacon or ham to make it lentil and bacon/ham soup
